Does anyone know why she was later replaced with Caity?

They needed an actress who's athletic and capable of doing fight scenes and stunts, it was their plan at the end of season 1 to make "Sara Lance" as "The Canary" and Caity Lotz has been doing wonderful jobs.

the needs of the role
the 'Sarah Lance' of the Pilot was a lite more than a prop; she was a point of reference to show how selfish 'pre-island Ollie' was, and create a Justifiable level of hate from Quinten, and a logical stumbling Block in front of his canon relationship with Laurel
also existing in Flashback with minimal scenes the primary criteria to be hired is "Be Hot' this is not to say that the actress couldn't handle more, it's simply that no more was asked of her. a year later when they needed a recurring (and eventually More) commitment for the character they needed to cast for the Physicality of the role, as well as the time commitment for X number of episodes, as with that combination the Level of Talent needed was probably higher- and that's not even accounting for things like the 1st actress being contracted to other work, or that she was only used in the Pilot to begin with because plan a was busy then

Caity Lotz is a better fit for the character. Of all the Arrowverse shows, she and Stephen Amell are hands down the best at stunts and action scenes because they can actually hang a little bit and do some of their own stunts, and know how to transition to their stunt doubles better where it is less obvious.
Caity Lotz is very physical in real life. She does parkour and I think she also does martial arts and gymnastics. -

my guess is that at the beginning they intended to keep/leave her Dead
But with Episode 16, and Mrs. Lance being convinced Sarah was alive (based on bad evidence) I think the nugget was planted about bringing Sarah back. Combine that with rumors of the Flash Spin-Off starting during the Break between seasons 1 and 2 and I'm guessing they wanted to flesh out their 'World of Heroes' before taking the super Powers leap, and Laurel (as quick as they eventually turned her) was far short of where she and the Plot needed to be to have her suiting up as Canary so they resurrected Sarah. -

The actress that played the fake Sara in season 1 waa the same actress that played her in the pilot and flashbacks. The writers had no intention of resurrecting her until they read fans talking about it. Resurrecting Sara was the primary catalyst for the showshow's quality going downhill.
