I asked a friend who is a local chef to look at my pantry and come up with a menu. This is what I will be serving:
Butter Poached Shrimp & Octopus
Romesco, herb paste, pickled turnup
Chicken Confit Croquettes
queso fresco, pork pate, mushroom duxelle, sassafras foam
Tempora Pork
pommel alight, chipotle corn, pickled red onion, brown sugar glaze
Charcuterie
baguette, soppressata, peppered salami, super blue sirloin, chicken liver mousse, feta, spicy blue, havarti, Syrian, camembert, butterkase, mulberry jam, gooseberry curd
Peach Tart
Peach puree, mayhaw berry jam, candied mint

Well, I had a guest cancelation so you can come but the menu stays as is.
It's hard to resist such a charming invitation.
