After Chris got home from filming her movie, Sharon asked how her day was, and she said, “It was kind of like the Walt Disney version of the Ho-Chi-Minh story, but other than that, it was terrific.” What did that mean?

Actually I have not seen The Exorcist, but that is a snappy little quip you quoted.
I suppose the reference to Ho Chi Mihn refers to his lifetime of fighting battles (metaphorical and not metaphorical) to further the struggle for the independence and unification of Vietnam. And from what I have read, that struggle was rife with corruption and betrayal. So I imagine that the Disney version would be a bloodless depiction of Ho Chi Mihn's life quest. (Possibly cartoon like.)
That's the way I would interpret the sarcasam, anyway.
Kind of like if someone asked you how your day was going, and you said, "Great–the shotgun I stuck in my mouth this morning didn't go off."
