Present the coach’s head on a plate like they were proud of it? Only to eat his body in some somber depressed mood like they weren’t proud of it?
This is before Lottie invoked the Spirit of Zolaar and they started screaming like wild animals.
It made for a very metal scene but it made absolutely no sense.

I think it was somber. It was shauna who decided what to do with coach and probably to display his head that way as well. It's the first time they show them doing this, they didn't show that for Javi, nor jackie, so I think this was part of Shauna's malice toward Natalie. Most of the characters did not actually want coach to be killed, much less to eat him now that they weren't even desperate for food anymore. This marks a big shift in the dynamics and actions of the characters.

They are well on their journey into becoming a wild, shamanistic cannibal death cult, the endpoint we know is coming as it was teased in the pilot episode. That's why they wore masks when they tried to force feed the coach–masks were pointless from a practical point of view. These are all elements of ritual.

I had wondered if the masks being used during the force feeding of Ben were more them trying to hide themselves out of shame for what they were doing…not that it really obscures their identity, but in the way someone may wear sunglasses to cover their eyes to give a sense of distance between oneself and others. It may be a tool to dissociate themselves from their actions too, which could also come into play for hunts the rituals to come.
