At what point did either Susan or Daniel realize that they were completely fuct and that they would die out in the middle of the ocean ? It seemed to me that Daniel held out a bit more hope(or was just plain naive / trying to be positive for his girlfriend's sake) about the situation. Susan on the other hand, seemed rather dire early on

I would say that as Dan's leg started to bleed more and more, they probably figured that all of the blood would attract more sharks.
