Off the top of my head:
Angelina Jolie: "Gia" and "Lara Croft: Tomb Raider"
Uma Thurman: "Dangerous Liaisons", "Pulp Fiction", "Beautiful Girls" "Gattaca" "Vatel" oh,
        anything
        , really!
Catherine Zeta-Jones: "The Mask of Zorro"
        Cameron Diaz: "The Mask"
        Sharon Stone: "Total Recall"
Denise Richards: "Starship Troopers" (I'm totally seriousI'm a straight woman, but when I saw her on screen I was like "Damn!")
Nicole Kidman: "Dead Calm" and "Moulin Rouge"
Rebecca De Mornay: "Risky Business" and "The Three Musketeers" (yes, in "The Three Musketeers", I'm serious)
Michelle Pfeiffer: "Scarface" and "Batman Returns"
        How's your head, David?

Agree with many, but I have a feeling that a straight woman's choices might not match up with many guys.
Just looking at your nominations from this one guy's perspective:
          On theseheck yeah.
Angelina Jolie: "Gia" and "Lara Croft: Tomb Raider"
Catherine Zeta-Jones: "The Mask of Zorro"
          Cameron Diaz: "The Mask"
Rebecca De Mornay: "Risky Business" and "The Three Musketeers" (yes, in "The Three Musketeers", I'm serious)
Michelle Pfeiffer: "Scarface" and "Batman Returns"
I'll give reasons for the ones I just dont see
Nicole Kidman: pretty but not all that sexy.
Sharon Stone: just can't get around the biootch factor.
Uma Thurman: not that pretty and not too sexy to boot.

As good as she looks in this m movie, I think they should have recast with a more charismatic actress. Elisha Cuthbert is bland. I also think the role was a little underwritten.

Elisha Cuthbert is the gold standard for being gorgeous in a movie (The Girl Next Door). To me, she'll never be topped - pure beauty at the highest level.
Some of my other favorite performances where the actresses looked stunning.
Rachel McAdams in Wedding Crashers - to me, she's stunningand pulled off every look in that movie. Isla Fisher was great, too.
                  Eva Green in Casino Royale
Kate Hudson in How to Lose a Guy in Ten Days
And - to the people who keep bringing up Cameron Diazgive me a break. She may be the most overrated "hot/stunning/etc." actress in history. Saying Cameron Diaz is stunning is like saying Courtney Love is stunning. You all should be ashamed of yourselves.

Liv Tyler in LOTR. A real woman.
Agreed with a post about Natalie Portman in Star Wars I (movie sucked)
Saw Natalie in Friends With Benefits - the movie was great, but she looked too skinny. (BTW Black Swan is the most revolting movie I've seen).
But.is the sexiest woman of all time Chrissie Hynde of The Pretenders singing "Brass In Pocket?" Followed by P!nk in her white jumpsuit in "There You Go."

Agree with OP, Elisha Cuthbert drop dead gorgeous in this.
                          Other Movies:
Milla in 5th (as previously announced)
                          Cameron in Mask (see above)
Scar Jo in The Island (crap movie, good looking girl)
Alicia Sliverstone in Clueless (oldie but a goldie)
They are my top five. I'm sure there are others, can't quite think of them ATM.

Gotta chime in here even though Elisha takes the cake, without a doubt here are some of my fave babes in recent films
Cameron Diaz in the Mask YES. My god, she has never, ever looked better in any of the movies she's been in. Probably the makeup, plus that was like her debut. But WOW.
Scarlett Johansson in Lost In Translation. Flawless.
Someone mentioned Julie Delpy in Before Sunrise oh yeah. She was LOVELY in both that film and its sequel, Before Sunset. A real keeper. Not as stunning as Diaz in the Mask but man, what a beauty.
Angelina Jolie in Playing By Heart (1998) the short hair thing just worked for her, bigtime. LOVE her in that film. Sheer perfection.
Liv Tyler in That Thing You Do! Mmmmmm.. epic beauty, sweet character. Gorgeous.
Neve Campbell in Scream and The Craft. everyone seems to forget how gorgeous she was in the mid-90s.
Ione Skye in Dream For An Insomniac yes. Ione in everything how about Gas Food Lodging? And the totally underground film "Free" - she looks gorgeous in that, too.
Amy Smart in Just Friends (Amy Smart in EVERYTHING) she just melts me into a puddle. What a gorgeous and sweet woman.
Kaitlin Doubleday in Waiting - wow. Sure, she's in a waitress uniform the entire film (except the end) but she is incredibly beautiful. Gorgeous eyes and smile. Little sis Portia is a cutie too (Youth In Revolt) but Kaitlin gets my vote.
Anna Faris in. well, everything she's in. What a stunner. Does not get the respect she deserves. She is hot as hell in Just Friends (although annoying) she's wonderful.
Rachel McAdams pick a movie. This woman is so beautiful, it hurts.
Agnes Bruckner in Blue Car and Dreamland. long, long before she turned into an orange-skinned tanning-bed disaster she was the hotness.
Margarita Levieva in Adventureland as "Lisa P" - except the restaurant scene (yuck) but in the main parts of the film her look/pink shirt, etc was the hotness and, it was a PERFECT homage to mid-to-late 80s hotties we all pined for at the time. "Lisa P" was legit, man.
Kathleen Robertson in XX/XY. Kathleen in EVERYTHING? Good god, she is STUNNING.
Alison Lohman in White Oleander pure, classic beauty.
Kate Winslet in Eternal Sunshine perfectly screwed-up, insane/neurotic and perfectly gorgeous. Any guy who did not want her throughout that film is either blind or gay.
Alicia Silverstone in Clueless (as mentioned above). man, I was obsessed with her from 1995-1997, no joke. Something about her just DID it for me, at that time. Perfection.
Natalie Portman in whatever. I especially like her in Beautiful Girls, even though she was young, it was completely understandable when Timothy Hutton's character become smitten with her who wouldn't have been?
Katherine Heigl in the movie 100 Girls totally underrated film. She is so perfect perfect bod, perfect face.
Kristen Bell in Forgetting Sarah Marshall and When In Rome I basically hated When In Rome, but damn, she is so lovely in it the girl everyone pined for in high school (and who probably was dating a douchebag at the time)..
and lastly Larisa Oleynik in 10 Things I Hate About You. total, classic beauty.
And, although not a total knockout (like Elisha) I love Kirsten Dunst's character "Claire Coburn" in Elizabethtown that's a girl I would marry in a heartbeat, if I were ever that lucky.

Imogen Poots in 28 Weeks Later. (Never been a worse name on a gorgeous woman.)
Diane Kruger in National Treasure was pretty insane.
For those who have said Nicole Kidman, I would mention "To Die For." Lord.
But I'm in here because I just caught the end of The Girl Next Door again, and Elisha has never been topped.

Plenty of great babes around nowadays, but you named some 40s hotties for sure.
I'd add Betty Grable and Carole Landis. And Jennifer Jones.
Jumping to the 80s or so-
                                          Kathleen Beller
                                          Danielle Brisbois
saw both of them at flea markets and they were breathtaking and body beautifuls.
                                          Stacey Nelkin
Terri something who was dating Tony Danza
lots more - these starlets come and go. they get tried of being boned and they get married and you never hear from them again.
