Then why was he using things that were in the room to create his story, instead of just making up the stories and names of places/people completely? Why give the detective a reason to believe that he, as Verbal Kint, was Keyser Soze? Because now, not only is his identity in jeopardy, but his lawyer's as well.

Because he didn't care if Kujan knew. He already told his story to the DA and got an immunity deal, the case was closed. It didn't matter anymore what he told Kujan, especially since it was an unofficial "interrogation". Kujan would eventually have found out his story was nonsense anyway, once he checked all the leads.
As was said in the movie, Soze will disappear and is never going to show his face again. He's wiped all traces. I don't think they would know where to look for him, and I think the LA police wouldn't even get any permission to investigate further as the case was closed.
I don't think the lawyer's identity was in jeopardy. He's probably the one who got Verbal the immunity deal and very likely used his real identity. Verbal never told anything incriminating about the real lawyer, so the police have nothing against him. Verbal was probably going to cut all ties with him, though.

He was arrogant. He was just messing with everyone at that point. He wanted to both get away and let everyone know who he was.

People miss this one important detail that you'll notice when seeing the movie a second time:
The version of the story that Verbal tells the DA mentions nothing about Keyser Soze. He tells the DA that it was a dope deal gone wrong and for his story he gets immunity. Verbal(Keyser) didn't know at that time that there was an Hungarian survivor who saw him.
Then Agent Baer finds out that the Hungarian can identify who Keyser Soze is. He arrives at the office and asks Agent Kujan to ask Verbal about Keyser Soze. When Kujan does Verbal shouts out some swear word in anger because until that point the police did not know the Keyser Soze angel of the whole story. So from this point on he has to make up a clever story on the spot about the whole thing. So basically he came in to tell Agent Kujan the version he told the DA but due to the cat getting out of the bag he tells a whole new story both to cover for himself and to find out how much the police know. Kujan clearly mentions to Verbal that he left the whole Keyser Soze thing out of the story he told the DA. Verbal successfully convinces them that Keaton was pulling the strings. People mistake it that he was doing it to toy with the police or that he was arrogant. He was just really smart and manipulative
In real life because he told a different version of the story to Kujan than to the DA (and that it was being recorded in Kujans office) the immunity deal would be off the table and he would be arrested for perjury, falsifying evidence, and obstruction of justice. But all the charges would most likely be dropped because he was cooperative and his version of the story was that he was hiding behind while all the others did the dirty work. He also had friends in high places who were pulling strings for him.

Your theory is plausible except that Verbal had already been embellishing his story using objects from the room even before Soze was mentioned. He had already used Skokie, Illinois, the fat lady, Guatemala and even Kobayashi. So he was increasing the odds of being found out, whether it was out of arrogance or in spite of being a criminal mastermind, he was unable to make up names and other details on the spot without taking them from the room he was in.

I think there is no Soze. Verbal doesn't even mention it until Kujan brings it up. He is just a clever confidence man who has some connections. The Hungarian has severe burns over most of his body and is doped to high heaven on pain pills. He most likely saw Verbal and assumed he was Soze, but he doesn't know either.

I still think the only way any of it makes any sense is that the Kaiser story is just a story, and that the character really is the Devil, with the real story being how five humans (including the lady lawyer) felt they were more capable than the Devil of doing what he did, and the Devil took umbrage at that, and purposely humiliated them before killing them and making them the least powerful, lowest on the totem pole, in Hell.

They pulled in Soze last minute so there was not enough time to come up with a story. He didn't even need to do it considering he had immunity.

That's the part I don't get about this so called "brillant story". Why does verbal have immunity again ?
For a story that's supposed to be coherent, unless I'm missing something, why would he get immunity ? What possibily did he offer to the cops to grant him "immunity" ? Did he turn himself in with the money or something ?
There was this huge shootout / drug deal where everyone died, and only verbal made it out alive. He does a testimony in which he doesn't mention Soze, and apparently doesn't really give the DEA the full picture, as he's adding alot of details at the last minute, during the before bail interrogation. He also keeps repeating he's "not a rat", hinting that he didn't rat anyone during his so called testimony ? Why would the DEA cut him an immunity deal if he doesn't at the very least provided them with info to catch a bigger fish ?
So why would he get immunity, then, if he didn't rat anyone and didn't provide anything helpful to the investigation ? He's the only alive witness to a crime he was directly involved in, and he fails to provide the police any information that would qualify as "key info". He's not the "usual suspect", he's the "Only remaining suspect" in this story, and giving your only suspect "immunity" makes no sense, especially when he himself admits he was involved in the boat heist that got so many people killed.
Just because the director keeps reminding us he has "immunity" doesn't make it more logical. He was directly involved in the boat heist, a heist where everyone involved was killed ? I really don't see what he could have provided that would grant him "immunity". Are we supposed to believe he got immunity simply because he has fake cerebral palsy ?

It's explicitly mentioned in the movie that he's protected from up high by "the prince of darkness". The mayor himself called the DA to pressure him into giving him a plea deal. And he's the only witness, so there's more reason to agree with that.
Why would the DEA cut him an immunity deal if he doesn't at the very least provided them with info to catch a bigger fish ?
The deal with the DA was made before Kujan showed up. Before that, there was no indication of a bigger fish or a rat, just a dope deal gone wrong. Without Verbal they had no idea what had happened, with his testimony they could close the case. And yes, because of his cerebal palsy, his testimony appeared to make sense..

Also, you know after agent Kujan asks "Who's Keyzer Soze" and then Spacey goes "Oh f", did Kujan ask him why the reaction and why and what he left out of his testament to the DA?

He does actually ask why he left Soze out and Verbal explains that his story about Soze is so full of holes that the DA wouldn't have given him immunity.
Earlier in the movie Kujan also asks Verbal what he left out in his statement to the DA, right before he starts telling about Redfoot and Kobayashi. So Kujan already knew he wasn't telling the whole truth.

But did he also ask why he exclaimed the "Oh beep term after Soze was mentioned, something like - "Hey, why are you so tense all of a sudden, you sure know something, tell me right now."
And did Kujan do anything when he realized he wasn't telling the whole truth?

Kujan didn't need to ask why he said that, because the reason was clear to him. When he found out about the Soze connection, he knew for certain Verbal was hiding something. Verbal said "Oh fnck!" because he knew that Kujan was now aware he was lying and he had to fess up.
And did Kujan do anything when he realized he wasn't telling the whole truth?
What do you mean? Kujan mentioned several times that he knew Verbal wasn't telling the whole truth.
