Her name is Cecil Hoffman. You may have missed it since it's a male name.

Judging by the paperback novelization based on the original screenplay by Kevin Jarre, she was to have a slightly bigger role in the movie. Remember when Behan tells Wyatt, upon the Earps arrival in town, that he (Behan) is on the Town Lot Commission and that a couple of cottages will be available for rental soon? There was to be a scene in which Virgil and Wyatt arrive just as the current resident (the Cecil Hoffman character) and her kids are being kicked out by one or two of Behan's deputies. (I think Stillwell is one.) The callousness of the act bothers Virgil and Wyatt, but they say nothing.
In real life, I don't think Behan was on the Town Lot Commission and the eviction would have been handled by the town marshal and not the sheriff.
