            I'd say the Crypt Keeper. Despite looking like a skeletal corpse, he's much tougher than he looks (he can survive decapitation), can regenerate his tissue (he
            did grow up from an undead baby to the adult corpse that we all know and love
            ), and unlike the Coroner he has an actual body count and appeared in more than one installment. For all we know, the Coroner's undead body finally went to rest for good after the two guys at the end were done with him.
