Spielberg wrote the story, right? So, it's not like Jaws or anything that came from an original novel. Sois there anywhere that explains why some of the choices use din the movie were made?
For example, were the other red-suited volunteers taken, or just Neary because he was actually "invited"..?
Was the choice of communicating through music based on scientific prediction of how an encounter might take place?
Was there a reason Flight 19 was chosen, or just because it's such a compelling mystery..?
How much scientific consultation or research was undertaken to conceive first contact..?
    Stuff like that. Ta.

This is not answered in the movie. The consensus seems to be that Neary was the only one who left with the aliens.
Was the choice of communicating through music based on scientific prediction of how an encounter might take place?
Spielberg just liked the idea of communicating through lights and music. He wanted the five note pattern to be like a doorbell ringing to signify a greeting.
Was there a reason Flight 19 was chosen, or just because it's such a compelling mystery..?
Pretty much because it's a compelling mystery that actually happened, to integrate a real event into the fictional story. The disappearance of the Cotopoxi was also a real event, which was the ship they find in the desert.
How much scientific consultation or research was undertaken to conceive first contact..?
Spielberg consulted with Dr. J. Allen Hynek, who also has a cameo in the film. Hynek was formerly in Project Blue Book, and a recognized authority on UFO sightings. The term "Close Encounters" comes from his book.
