Sort of like '300' standing near the pit?

It's pretty clear Bishop in his own way has a kind of death wish (I couldn't help saying it.). He knows quite a deal about the Organization's structure and history (perhaps not as much as he realises), but suffers from acute anxiety issues obviously related to his job, which he would like to transition from, but is clearly not sure on how to achieve this successfully. Prepared to dance with the devil to a degree, he takes Steve to Italy, putting his issues with him to the back burner. It's kind of open - ended regarding the wine IMO. May be he had an idea about it, may be he didn't. I think that is one of the positives of this rather atmospheric Bronson offering.

Agreed. If he didn't feel some type of real threat to his life, i.e. know that he himself could be killed at any time, he wouldn't have prepared Steve's welcome home party.
