Has there ever been an explanation offered on why the planet featured in Miri was shaped EXACTLY like Earth? Continents, size, etc.?

"Ever" is a long time, bud. In terms of the episode itself and the original production team, no; it was really just a dramatic gimmick they could feature in the 'next week's episode' trailer. Even good old Hodgkin's Law of Parallel Planetary Development couldn't be twisted to cover such a preposterous coincidence.
But you can bet that someone, somewhere, has concocted a fan fiction that purports to explain the extreme statistical anomaly.

Too bad they used that gimmick in Miriit wasn't really relative to the story at all, and would've made a heckuva lot more sense if used in The Omega Glory.
