It kind of feels like the Old Year has not ended and the New Year begun until it happens in the Eastern Time Zone. Every other time zone is early or late and nobody cares about them. I suppose it's because of Washington D.C. but especially New York City.

You are thinking of Universal Coordinated Time (UTC) which is defined as EST+5 (or +4) depending on whether or not Daylight Saving Time is in effect.
